My 25th birthday was yesterday! I had a really great day. Noah came home early to spend time with me, and we vegged all afternoon. We also went to my favorite local Mexican restaurant with my family last night. Just an awesome, awesome day!

How perfect are they??
For my birthday, I decided I’d try a few new recipes. We’ve had a bunch of frozen seafood in our deep freeze for awhile now, and I’ve been meaning to use it up. I’m a Food Network ADDICT, and they’ve been showing a bunch of great ways to use seafood lately. I tried a couple!
The first one I did was a scallop slider burger that Paula Deen did. You can find the recipe here. They were good – just make sure you like seafood before eating!
I also made the cilantro mayo that goes with them. Also VERY good! If you like the salsa at Mexican restaurants, you’ll like this.
I also made Roasted Shrimp Salad by Ina Garten. I’ve never really cooked any of her stuff before, so I was interested to see how it turned out. It was different – not in a bad way, just different than anything I’ve tried before.
Very easy to make though! You just clean shrimp, throw it on a pan, and roast for about 10 minutes. Then, mix the sauce together…
…and toss those together.
I made the mistake of putting the shrimp into the sauce, and the salad was way too mayo-ey. Mix in a little bit of the sauce at a time, and add as needed!
We made pita sandwiches out of this, with a little bit of lettuce and tomato. Delish!
