Tried yet another new recipe this weekend!
This was just to use up a few things I had around the house…and turned out great. I had to share!
4 large squash
4 red potatoes
1 cup butter (sounds like a lot, but it isn’t all on the food!)
4 tbsp. olive oil
1 lb. fish (marinated in chili powder, jalapeno, garlic, olive oil, and salt/pepper)
First, take a piece of parchment paper and cover a baking sheet. Coat with butter.
Take half of the squash, potatoes, and onion and cover the paper. Top with half of the olive oil. Season the veggies with salt/pepper.
Put the fish on top of that. Top with the marinade.
Cover with the rest of the veggies. Top with other half of the olive oil.
Coat another piece of parchment paper with butter and place on top. Fold the sides in.
Bake at 350 degrees for 30-40 minutes.
Quick and easy! We made some of the fish into fish tacos (just add some arugula, sour cream, and salsa).
