I've seen menu Monday posts for the longest time but I've never done one. I thought it would be fun to actually write down our menu for a whole week!

Here's what we had last week…

Monday

 

 
Open Face Italian Hoagies with Brussels Sprouts
 
I used the Italian meatballs I made on my freezer meal day, put them on frozen Texas toast, and topped with tomato sauce and Italian cheese. We ate this a few times with different veggies!
 
Tuesday
 

Shrimp and Grits Casserole Recipe

 
For Fat Tuesday, I made Shrimp and Grits casserole! It was a recipe I just kind of made up as I went and it turned out great!
 
Here was my recipe:
 
Shrimp and Grits Casserole
 
Ingredients
 
8 packs Quaker Instant Cheese Grits
2 cups water
1 1/2 cups 2% milk
1lb Shrimp
1 can Progresso Three Cheese Recipe Starters
 1 can Rotel
2 cups Shredded Cheddar Cheese
2 cups Celery, Chopped
1 tbsp Garlic, Minced

Directions
Mix together the water, milk, and grits in a casserole dish. Cook according to package directions in microwave.

Meanwhile, cook celery in a pan until translucent. Add garlic and shrimp and cook until just pink. Add Rotel and recipe starter. Cook for a few minutes, just until everything is blended well.

Take cooked grits and spread in a sprayed 9 x 13 Pyrex dish. Sprinkle with half of the cheese. Bake at 350 degrees for 10 minutes, then put under the broiler for about 5 minutes.

Add shrimp mixture to top. Top with the rest of the cheese. Cook for 30 minutes at 350 degrees, then turn broiler on and cook for about 5 more minutes.

Wednesday

Leftover day! I usually do 2-3 leftover days a week…I just cook extra on the other days.

Thursday


 I blogged about this a few days ago…for Valentine's Day, I made heart shaped pancakes, heart shaped bacon, and eggs. Breakfast for dinner is Noah's favorite!

Friday

Leftover day!

Saturday

This was our Valentine's date night. Noah took me to one of my favorite local places!

Sunday
 

 

I made the veggie beef soup I made on my freezer meal day. We had it with cornbread.
