I was SO excited to see Brie cheese on sale this week…it's one of my favorite treats! I normally have it baked with a little bit of preserves/nuts on top, but I thought I'd try something new it this go-round.

Baked Brie Pillows
Ingredients
1 wheel Brie, sliced into 2″ pieces
1 tube (8 ct.) crescent rolls
1/4 cup apricot preserved
Directions
(This is really more assembly than recipe!) Roll out your crescent rolls, and press together two triangles. You should have one long rectangle…cut that in half hamburger style, like this…
Then just assemble! Take one of the crescent roll pieces and put a long piece of brie and a little bit of preserves in the middle.
Fold over and press around the edge with a fork. Make sure you seal the edges well – it will ooze in the oven!
Bake at 350 degrees for 15 minutes or so, until the tops start to brown.

SO delicious. They are best warm. This would be great for a quick dinner party appetizer!
