I am a pimento cheese fanatic.
Furthermore, if you don’t like pimento cheese, I don’t quite understand why.
MAN it’s good. I could eat a pimento cheese sandwich every single day for lunch.
And every year for Master’s weekend, I have to make a big batch of pimento cheese.
But eventually? You have to get a little creative with it. So I made these this year – so easy and they really were great!
Pimento Cheese Puffs
Ingredients
1 lb. block sharp pimento cheese, grated (not bagged shredded cheese…has to be fresh-grated!)
1/4 cup light mayo
1 4oz. jar diced pimento, drained
1/4 tsp cayenne pepper
1/4 tsp paprika
1 tube crescent rolls
Directions
In a large bowl, mix together the cheese, mayo, pimento, and spices. Let this chill for at least 2-3 hours.
Take two triangles of the crescent rolls and press together into a rectangle. Cut this rectangle hamburger-style into two smaller rectangles (teacher friends will get this reference).
In each smaller rectangle, place about a tablespoon of pimento cheese. Press together tightly into a ball (very important that there are no openings)…then, roll into a ball with both hands.

Place on a greased cookie sheet (excuse my gross one). If there are any openings in the ball, put them at the top…that way, you won’t have a nasty oozy mess all over your cookie sheet.
Bake for 12-14 minutes at 400 degrees, or until dough turns golden brown. Let cool for 5-10 minutes before serving.
