This recipe for Cookie Butter Crinkle Cookies uses the popular Biscoff spread from Trader Joe’s to make an easy dessert that’s full of rich spice!
It’s cookie week around here!
Each December, I set out to create a few new cookie recipes that would be great for the holiday season. These are all Santa-approved recipes that usually don’t take a ton of effort. In our family, we love to do an annual cookie day, making way to many delicious treats for our friends and family. The recipes you’ll see on the blog in the next few days are perfect for that! (You can see past cookie weeks here.)
First up – I’m using one of my family’s favorite sweet treats to make a really easy cookie that’s full of rich, warm flavor. Cookie Butter Crinkle Cookies are just so darn pretty. Cookie dough balls are covered in powdered sugar before baking and, like magic, form gorgeous crackles and crinkles on the outside of the cookie while baking.
One of my favorite tricks to get that crinkle effect is to actually use 2 different kinds of sugar. Use regular granulated sugar as a “base coat” – simply roll your cookie dough ball in this sugar before giving the top coat of powdered sugar. And don’t be shy with the powdered sugar…the more you use, the prettier the outside of your cookie will be!
It also helps to use a chilled dough when making these cookies. That makes sure the dough doesn’t spread too quickly and lose that pretty crinkle effect.
Now, let’s get to the recipe!
Cookie Butter Crinkle Cookies
- 1 cup brown sugar
- 2 cups flour
- 2 tsp baking powder
- 3/4 cup cookie butter
- 3 eggs
- 1 tsp vanilla extract
- pinch salt
- 2 tsp ground ginger
- 1/4 cup granulated white sugar
- 1/2 cup powdered sugar
- In a large bowl, blend brown sugar, flour, salt, ginger, and baking powder with a fork.
- Use a mixer to blend in cookie butter, eggs, and vanilla extract until dough is smooth (dough will be thick).
- Chill cookie dough for 1-2 hours.
- Pour granulated sugar and powdered sugar into separate bowls. Roll cookie dough into 1" balls with your hands. Roll dough balls in granulated sugar first; then, roll in powdered sugar until well-covered. Place dough balls 2" apart on a silicone-lined cookie sheet.
- Bake at 350 degrees for about 12 minutes, until tops of cookies start to show crinkle effect and bottoms of cookies are golden brown.
