This Speculoos Cookie Butter Pie recipe takes the popular Trader Joe's spread to a whole new level! With a gingersnap crust and cream cheese filling, everyone will love this easy, no bake dessert idea.

One of my family's favorite treats is Speculoos Cookie Butter. We pick up a jar pretty much every time we make a trip to our nearest Trader Joe's (about 2 hours away, but it's worth it).

Cookie butter is a super popular spread right now. It has the consistency of peanut butter with a hint of spice and a really rich, sweet flavor. With that flavor profile, it's the perfect spread for Trader Joe's Ginger Snaps (seriously, try it). It's also great on toast, in oatmeal, on pancakes, or even by the spoonful. Not that I would know anything about that.

The Inspiration

Since we love cookie butter with gingersnaps, I thought I'd combine the two in this no-bake cookie butter pie recipe! You can whip this treat up in just a few minutes. After you prepare the filling and the crust, chill for at least a few hours in the fridge in order to firm up the filling. Once chilled, you'll have a sinfully delicious, rich pie that will be a total crowd-pleaser.

It ends up tasting like a mixture between creamy Speculoos cookies and the best spices in a gingersnap cookie: cloves, nutmeg, cinnamon, and ginger. On top of that, the crunchy texture of the crust works perfectly with the creamy consistency of the filling.

All you need is a few super simple ingredients and, obviously, a big jar of cookie butter (either the Biscoff Cookie Butter or the Speculoos Cookie Butter from Trader Joe's). If you don't have a local Trader Joe's, many grocery stores have started carrying cookie butter variations that are really similar to the Trader Joe's variety. As a matter of fact, even Walmart has their own cookie butter now! Cookie butter has become so popular in the past few years, so it shouldn't be an issue to find some variation in a store near you. If it is, there are a lot of recipes for homemade cookie butter out there now.

If you'd prefer to make this recipe with peanut butter instead, I think the flavors would work perfectly together. You could even spice it up by adding chocolate chips or oreo cookie pieces to your filling!

  • Place ginger snaps in a large zip-top bag and crush into small crumbs. This can also be done with a food processor. Reserve about ½ cup of crumbs.
  • Mix remaining cookie crumbs with melted butter and press into the bottom of a spring-form pan or pie plate.
  • In a large bowl, blend cream cheese, whipping cream, cookie butter, powdered sugar, vanilla extract, and salt, stirring until well-combined. Pour mixture over pie crust.
  • Sprinkle reserved cookie crumbs on top of the pie.
  • Allow to chill for at least 3-4 hours (preferably overnight) before serving.

  1. This sounds delicious! We discovered cookie butter a few years ago through another blogger and while I have never tried the Trader Joes version it is delicious! We are definitely going to have to try making a pie with it for sure. Pinned.

  3. Made this yesterday and had it today, topped with homemade whipped cream. We felt it really needed the lighter/looser texture of the whipped cream because the rest is so thick. You definitely don't need half a cup of crumbs for the top, a tablespoon or two would do. Of course it tastes exactly as you'd expect, just wonderful. Made it in an 9" springform and it seemed like enough crust but only about 1/2" of filling. These would make nice bites if made in a rectangular pan. But really, buy a little extra heavy cream and powdered sugar for a whipped cream topping!
