Blueberry Pancake Cupcakes

Ingredients

  • 1 cup complete pancake baking mix
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup salted butter melted
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1 cup blueberries
  • 1 stick salted butter
  • 3 cups powdered sugar
  • 1/2 cup blueberries coarsely blended
  • 40 blueberries
  • 1 cup of pancake mix prepared as 1” pancakes

Instructions

  • Mix together first 6 ingredients. Make sure that there are no lumps.
  • Spoon mixture into a lined cupcake pan. Toss blueberries with a little bit of the extra pancake mix to ensure they won't sink to the bottom of your cupcakes. Place 4-5 in each cupcake, pressing them into the mixture.
  • Bake the cupcakes for 15-17 minutes at 350 degrees, until tops of cupcakes begin to brown. Cool well before frosting.
  • In the meantime, beat together ingredients for your icing well. Chill for 20-30 minutes before frosting. Mix a little bit of your pancake batter as directed on the box and prepare as 1” cupcakes for the topping.
  • Pipe frosting onto your cupcakes. Top with pancakes and blueberries to make a paw shape to celebrate the premiere of Puppy Dog Pals!
